Grilled Flatbread Pizza w/ Tomato, Mozzarella and Arugula
Quick and easy meal that is always a hit!
Ingredients:
- 1 medium flatbread
- 1/4 cup pizza sauce
- 1 (6oz) mozzarella ball, sliced
- 1 large tomato, sliced
- 1 bag baby arugula
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice
- Salt and pepper
Instructions:
- Heat grill to medium-high heat.
- Place flatbread on grill for 2-3 minutes or until bottom is toasted.
- Remove from grill; place pizza sauce, mozzarella cheese and tomato on flatbread.
- Place back on grill, close lid an allow to cook for 4-5 minutes or until cheese is melted and bubbly.
- Remove from grill.
- Toss arugula in a bowl with balsamic vinegar, lemon juice, salt and pepper. Place on top of flatbread.
- Slice and serve warm.
- Enjoy!!

Do you have a recipe for Ahi Tuna? I grilled some last night for my family & they said it was really good but I think I may have over cooked it because it didn’t “look” raw like we’re used to having it in a restaurant!
This one had several spices that I missed together plus cilantro & lime! (Also had a sour cream sauce!) All of these things made it a Mexican flavored which is fine but not what we always want, ya know? Lol

I love to make a simple marinade with a soy base and any other favors you love with soy. Marinate the tuna steaks for an hour. When you go to sear them, make sure the skillet is on high heat. I only cook them for about a minute on each side. Remove, cover and allow to rest for about 5 minutes. Hope this helps!
