I took my favorite treat and made it my own. These cookies are soft and chewy and filled with the most delicious cream filling. These bring me right back to my childhood! Hope you enjoy these as much as my family and I do!
Oatmeal Cream Pies
Ingredients:
1 cup of butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1 tbsp molasses
2 tsp vanilla
2 large eggs
2 cups flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp cloves, ground
1/4 tsp salt
3 cups quick oats
Cream filling:
3/4 cup butter, softened
2 1/2 cups powdered sugar
1 tsp vanilla extract
1 tbsp milk
Instructions
Preheat oven to 350 degrees
Using a mixer, cream together butter and sugars until light and fluffy. About 3-4 minutes.
Add in molasses, vanilla and eggs and mix to combine.
Turn the mixture off and add flour, baking soda, cinnamon, cloves and salt. Mix on low speed until just combined. Don’t over mix!
Fold in oats.
Line a baking sheet with a baking mat.
Form the cookies into balls about 1-1 1/2 tablespoons or use a cookie scoop and line them on baking sheet 2 inches apart.
Bake for 9-11 minutes or until tops are set.
Let them cool on cookie sheet for about 10 minutes before transferring to a wire rack.
Cream filling:
Using a mixer, beat butter until fluffy. About 2 minutes.
Add in powdered sugar and mix on medium speed for about 2 minutes until incorporated.
Add in vanilla and milk and mix on med to high speed until combined and creamy. About 1-2 minutes.
Take one of the cookies and add about 1 tablespoon of cream to the bottom and top with another cookie.
