Zucchini noodles w/ tomatoes, lemon and basil
If you’re looking for a light and healthy dish, this one is for you!
2 large zucchini
1 tablespoon olive oil
2 cloves garlic, minced
1/2 lemon, zest and juice, reserve other half
2 large tomatoes, diced
3 tablespoons Parmesan cheese
2 tablespoons fresh basil, chopped
Salt and pepper to taste
1/8 teaspoon red pepper flakes
Use a spiralizer to spiralize zucchini.
Heat a large skillet over medium-high heat and add oil. Once oil is heated, add zucchini and stir to around for about 2 minutes. Add in lemon zest, lemon juice, salt, pepper and red pepper flakes.
Add in tomatoes and parmesan cheese, stir until tomatoes are heated through, about 1 minute.
Remove from heat. Top with basil and the other half of lemon juice.
