Rosemary Roasted Sweet Potatoes
- 1 large sweet potato, peeled, cubed
- 1 tablespoon olive oil
- 1 teaspoon rosemary, fresh, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Preheat oven to 400 degrees F.
- In a medium bowl toss sweet potatoes, olive oil, rosemary, salt and pepper.
- Pour in a large cast iron skillet.
- Roast for 30 minutes, or until crisp and browned.
