Rosemary Roasted Sweet Potatoes


  • 1 large sweet potato, peeled, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon rosemary, fresh, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat oven to 400 degrees F.
  2. In a medium bowl toss sweet potatoes, olive oil, rosemary, salt and pepper.
  3. Pour in a large cast iron skillet.
  4. Roast for 30 minutes, or until crisp and browned.
  5. Enjoy!!
