Southwest Tilapia with Avocado Cilantro Crema
This recipe is fresh and packed with so much flavor from the southwest rub. The crema adds a nice bonus that’s exactly what it needs!
Ingredients:
- 1 lb Tilapia fillets
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Juice of 1 lime
Crema:
- 1 avocado, ripe
- 1/2 cup cilantro, roughly chopped
- 1/3 cup greek yogurt
- 2 garlic cloves
- Juice and zest of 1 lime
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
- Preheat oven to 400 degrees F.
- In a small bowl mix together chili powder, cumin, paprika, garlic powder, salt and pepper. Set aside.
- Drizzle olive oil over Tilapia fillets then rub spice mixture all over fillets until each fillet is fully coated.
- Spray a baking sheet with non-stick cooking spray. Place fillets on baking sheet and squeeze lime juice over each fillet.
- Bake for 12-15 minutes or until fish is flaky.
- While fish is baking prepare the crema. In a blander add all crema ingredients and blend until mixture is creamy and smooth.
- Remove fish and top with crema and chopped cilantro.
