Southwest Tilapia with Avocado Cilantro Crema

This recipe is fresh and packed with so much flavor from the southwest rub. The crema adds a nice bonus that’s exactly what it needs!

Ingredients:

  • 1 lb Tilapia fillets
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Juice of 1 lime

Crema:

  • 1 avocado, ripe
  • 1/2 cup cilantro, roughly chopped
  • 1/3 cup greek yogurt
  • 2 garlic cloves
  • Juice and zest of 1 lime
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions:

  1. Preheat oven to 400 degrees F.
  2. In a small bowl mix together chili powder, cumin, paprika, garlic powder, salt and pepper. Set aside.
  3. Drizzle olive oil over Tilapia fillets then rub spice mixture all over fillets until each fillet is fully coated.
  4. Spray a baking sheet with non-stick cooking spray. Place fillets on baking sheet and squeeze lime juice over each fillet.
  5. Bake for 12-15 minutes or until fish is flaky.
  6. While fish is baking prepare the crema. In a blander add all crema ingredients and blend until mixture is creamy and smooth.
  7. Remove fish and top with crema and chopped cilantro.
  8. Enjoy!!
