Grilled Romaine Salad with Caesar Vinaigrette
This salad is absolutely divine!
Ingredients:
- 3 heads romaine
- 1 tablespoon olive oil
- Salt and pepper
Dressing:
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
- 1/2 teaspoon dijon mustard
- 1 teaspoon lemon juice
- 2 tablespoons Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions:
- Preheat grill to medium-high heat.
- Drizzle romaine with olive oil, salt and pepper. Grill romaine for 2 minutes on each side; face down side first. Remove when romaine is slightly wilted and charred.
- In a small bowl whisk together all dressing ingredients; Pour evenly over cooked romaine.
- Garnish with more Parmesan cheese, optional.
