Steak Stir-Fry with Zucchini Noodles
This low carb dish is delicious and the zucchini noodles are the perfect substitute for lo mein.
Ingredients:
- 3 new york strips, 1/2 inch thick
- 1 tablespoon seasame oil
- 3 large zucchinis, spiralized
- 1 cup broccoli, fresh
- 1 red bell pepper, diced
- 1 cup fresh green beans
- 1 cup fresh mushrooms, sliced
Steak Marinade:
- Juice of 2 limes
- Zest of 1 lime
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1/2 teaspoon red pepper flakes
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup cilantro, chopped
Stir-fry sauce:
- 1 teaspoon seasame oil
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, minced
- 1/8 teaspoon red pepper flakes
- 1 tablespoon cornstarch
Instructions:
- In a small bowl mix together all steak marinade ingredients. Place steak in a shallow dish and pour marinade over steak. Cover and refrigerate for up to 8 hours.
- Heat seasame oil over medium-high heat in a large skillet or wok. Add zucchini noodles, broccoli, pepper, green beans and mushrooms and cook for 5-6 minutes or until veggies are tender. For the sauce, mix together all the sauce ingredients until combined. Pour sauce in skillet over veggies, stir and allow to cook for 2 minutes. Turn the heat off and cover.
- Lightly oil grill grates on a stovetop grill or outdoor grill and heat to high heat. Place steaks on grill and cook for 2-3 minutes per side. Steaks are thin so they wont take long. Remove and allow to rest for 5-10 minutes. Slice into strips then toss in stir fry mixture. Serve and garnish with fresh cilantro and squeezed lime.
